MARUZZARO

The Maruzza is the snail catcher , which is found in the countryside along damp walls .  Maruzzaro at the morning was going to hunt of these precious shellfishes (or them, Venafro buying from the farmers which were taking them to the market,  from Sora, S.Germano) and later having put them  under a vase turned over was boiling them with  salt and some tomato or a parsley or chervil quiff. They were soaked in water under a vase and then boiled with some salt and tomatoe and herbs .  Maruzzaro then roasted them and sold them cooked in a fish soup.
